Instructions
1.
Preheat your oven to 350°F (175°C).

In a skillet, sauté the mushrooms and spinach over medium heat until softened, about 5 minutes.

In a bowl, whisk together the eggs, cooked quinoa, sautéed vegetables, and feta cheese. Season with salt and pepper.
4.
Pour the mixture into greased muffin tins, filling each cup about 3/4 full.

Bake for 15-20 minutes, or until the egg is set and lightly golden.
6.
While the egg bites are baking, prepare the yogurt bowl by combining Greek yogurt, sliced banana, and hemp seeds in a bowl.
7.
Once the egg bites are done, let them cool slightly before serving with the yogurt bowl.

1/2 cup feta cheese, crumbled
