Instructions
1.
In a large bowl, combine the low-fat cottage cheese and Greek yogurt. Mix until smooth and creamy (about 2 minutes).
2.
Add the vanilla extract and honey (if using) to the mixture and stir well.
3.
Fold in the chia seeds and let the mixture sit for about 5 minutes to allow the chia seeds to absorb moisture.
4.
Divide the yogurt mixture into four bowls or jars.
5.
Top each serving with mixed berries and sliced almonds or walnuts for added crunch and nutrition.
6.
Serve immediately or refrigerate for up to 2 days.
