Instructions
1.
In a bowl, mix the Greek yogurt with half of the halved grapes. Set aside.
2.
In a non-stick skillet, spray a little olive oil and heat over medium.
3.
Add the diced green bell pepper and sauté for 2-3 minutes until softened.
4.
Add the chopped spinach and cook for another 2 minutes until wilted.
5.
In a bowl, whisk the eggs with salt and pepper, then pour into the skillet.
6.
Scramble the eggs with the vegetables until fully cooked, about 3-4 minutes.
7.
Serve the scrambled eggs alongside the yogurt mixture topped with the remaining grapes.
