“Greek yogurt with a keto nut based granola. Chia seeds and blueberries. I also had a small egge white omlette with spinach. We have a family holiday today where we gift each other books and read all day and eat chocolate and hot cocoa. So I am planning on having a few treats today. But I tried to eat a big breakfast first so I wouldnt want as many treats.”

Instructions
1.
In a bowl, combine the Greek yogurt and chia seeds. Stir well and let it sit for about 5 minutes to allow the chia seeds to absorb some moisture.

While the yogurt is setting, prepare the egg white omelette. In a non-stick skillet, lightly sauté the spinach until wilted, about 2 minutes.

Add the egg whites to the skillet and cook until set, about 3 minutes. Fold the omelette in half and set aside.
4.
Once the yogurt has thickened slightly, layer it in bowls with the keto nut-based granola and blueberries.
5.
Serve the yogurt mixture alongside the spinach omelette for a complete breakfast.
