Instructions
1.
In a mixing bowl, combine the low-fat cottage cheese and vanilla extract (if using).
2.
Add the fresh pineapple chunks and mix gently until well combined.
3.
If desired, stir in chia seeds for added fiber and texture.
4.
Taste the mixture and add honey or maple syrup if you prefer a sweeter flavor.
5.
Serve immediately in bowls or store in the refrigerator for up to 2 days.
