Instructions
1.
1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

2. In a non-stick skillet, scramble the eggs over medium heat until fully cooked (about 5 minutes). Season with salt and pepper.

3. Spread a generous layer of hummus on each slice of toast.

4. Top the hummus with halved cherry tomatoes and scrambled eggs.

5. If desired, add fresh spinach or arugula on top for extra fiber.

6. Serve immediately and enjoy your healthy breakfast!
