Egg tomato hummus toast. I had a whey shake too.

Enjoy and good call on the shake for a boos of protein! Just make sure the one you are having has no added sugar other than that keep up the good effort

Instructions

  • 1.

    1. Toast the whole grain bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. In a non-stick skillet, scramble the eggs over medium heat until fully cooked (about 5 minutes). Season with salt and pepper.

  • 3.

    3. Spread a generous layer of hummus on each slice of toast.

  • 4.

    4. Top the hummus with halved cherry tomatoes and scrambled eggs.

  • 5.

    5. If desired, add fresh spinach or arugula on top for extra fiber.

  • 6.

    6. Serve immediately and enjoy your healthy breakfast!
