Instructions

1. In a skillet, heat a small amount of olive oil or cooking spray over medium heat.

2. Cook the turkey sausage patties for about 5-7 minutes, flipping halfway through until browned and cooked through.

3. While the sausage is cooking, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

4. Pour the eggs into the skillet with the sausage and cook, stirring gently, until the eggs are scrambled and cooked to your liking (about 3-5 minutes).

5. If using, add the fresh spinach to the skillet in the last minute of cooking to wilt it slightly.

6. Remove from heat and sprinkle the low-fat cheese over the top, allowing it to melt slightly before serving.
