Instructions
1.
Preheat your oven to 350°F (175°C).

In a bowl, whisk the egg whites with salt and pepper.
3.
In a baking dish, arrange the sliced chicken thighs and pour the egg whites over them.
4.
Bake in the oven for about 15 minutes, or until the egg whites are set.
5.
While the egg and chicken bake, slice the apples and sauté them in a pan with olive oil for about 5 minutes until slightly soft.
6.
Serve the baked egg whites and chicken with the sautéed apples on the side. For added fiber, mix in some fresh spinach or kale before serving.
