Instructions
1.
Preheat your oven to 400°F (200°C).

In a bowl, toss the diced sweet potato, chopped onion, and asparagus with olive oil, salt, and pepper. Spread them on a baking sheet.

Roast the vegetables in the oven for about 20 minutes, or until tender and slightly caramelized.
4.
While the vegetables are roasting, cook the egg whites in a non-stick skillet over medium heat until set, about 3-4 minutes.
5.
Slice the avocado in half, remove the pit, and scoop out the flesh. Mash it lightly with a fork and season with salt and pepper.
6.
Once the vegetables are done, assemble your plate with roasted veggies, egg whites, and avocado. Optionally, add fresh spinach or kale for extra fiber.
