I had two eggs for breakfast this morning. Im going to try and remember to get avocados next time I go to the store. I also had a cup of coffee with a splash of creamer

Nicely done!! Great job :) Adding avocados will add some healthy fat and make your breakfasts even more filling

Instructions

  • 1.

    1. Heat a non-stick skillet over medium heat.

  • 2.

    2. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.

  • 3.

    3. While the eggs are cooking, slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper.

  • 4.

    4. Once the eggs are cooked, carefully transfer them to a plate.

  • 5.

    5. Spread the mashed avocado on the plate next to the eggs.

  • 6.

    6. Garnish with fresh herbs if desired and serve immediately.
