Instructions

  • 1.

    1. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil (about 1 tsp).

    2. Add the ground turkey to the skillet, season with salt and pepper, and cook until browned, about 5-7 minutes.

    3. While the turkey is cooking, whisk together the eggs and egg whites in a bowl.

    4. Once the turkey is cooked, add the sliced mushrooms and spinach to the skillet. Sauté for 2-3 minutes until the spinach is wilted.

    5. Pour the egg mixture over the turkey and vegetables. Stir gently to combine and cook until the eggs are set, about 3-4 minutes.
