Instructions

  • 1.

    1. Heat olive oil in a large skillet over medium heat (about 2 minutes).

  • 2.

    2. Add diced red potatoes and season with salt and pepper. Cook for about 10-12 minutes, stirring occasionally, until golden and tender.

    3. While the potatoes are cooking, in another pan, sauté the spinach over medium heat until wilted (about 3-4 minutes). Set aside.

    4. In the same skillet used for the potatoes, crack the eggs and cook to your desired doneness (about 3-5 minutes for sunny-side up).
