Your choice of overnight oats with almond milk blueberries coconut and protein powder is a creative way to incorporate healthy foods into your meal. Great job Christy!

Instructions

  • 1.

    In a large mixing bowl, combine the rolled oats, almond milk, protein powder, chia seeds, vanilla extract, and a pinch of salt. Stir well until all ingredients are fully mixed together. (2 minutes)

  • 2.

    Add the fresh blueberries and shredded coconut to the mixture, gently folding them in to avoid crushing the berries. (1 minute)

  • 3.

    Divide the mixture evenly into four jars or containers with lids. (2 minutes)

  • 4.

    Cover the jars and refrigerate overnight (or for at least 4 hours) to allow the oats to soak and soften. (8 hours)

  • 5.

    In the morning, give the oats a good stir and add a splash of almond milk if needed for desired consistency. Top with additional blueberries and coconut before serving. (2 minutes)
