Instructions
1.
Heat olive oil in a non-stick skillet over medium heat (about 2 minutes).

Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny (about 3-4 minutes).

While the eggs are cooking, warm the Chile verde in a separate pan over low heat (about 5 minutes).

Once the eggs are cooked to your liking, carefully place them on plates.
5.
Top each egg with a generous spoonful of Chile verde.
6.
Serve with halved cherry tomatoes on the side and add fresh spinach if desired.
