Instructions
1.
1. In a non-stick skillet, heat a small amount of olive oil spray over medium heat.

2. Add the spinach and sauté for 2-3 minutes until wilted.
3.
3. In a bowl, whisk the eggs with salt and pepper.
4.
4. Pour the eggs over the spinach and cook for 3-4 minutes until the edges start to set.
5.
5. Gently lift the edges of the omelet to allow uncooked egg to flow underneath.
6.
6. Once mostly set, add the salsa on top and fold the omelet in half.
7.
7. Cook for another 1-2 minutes until fully cooked.
8.
8. Serve topped with sliced avocado.

1/2 cup salsa (preferably low-sugar)

Salt and pepper to taste
