Youre making solid progress towards your weekly goal of having a protein-rich breakfast. Your meal looks both nutritious and delicious packed with lean proteins from eggs and impossible meat and complemented by cheese beans and berries.

Instructions

  • 1.

    In a large bowl, whisk together the eggs and season with salt and pepper. (2 minutes)

  • 2.

    In a non-stick skillet, heat a little olive oil over medium heat. Add the Impossible meat and cook until browned. (5 minutes)

  • 3.

    Add the black beans to the skillet and stir to combine. Cook for another 2 minutes.

  • 4.

    Pour the whisked eggs into the skillet, stirring gently to combine with the meat and beans. Cook until the eggs are set, about 3-4 minutes.

  • 5.

    In the last minute of cooking, sprinkle the cheese on top and cover the skillet to melt the cheese. (1 minute)

  • 6.

    Serve the egg mixture on plates and top with fresh mixed berries and banana slices.

    1 cup of shredded low-fat cheese

    1 cup of black beans (cooked and drained)

  • 4.

    1 cup of Impossible meat (or any plant-based ground meat)

  • 5.

    1 cup of mixed berries (blackberries, raspberries, and peaches)

  • 6.

    1 banana
