Instructions

    1. In a large skillet, heat a small amount of olive oil spray over medium heat.

    2. Add the chicken sausage links and cook for about 5 minutes, turning occasionally until browned and heated through.

    3. While the sausage is cooking, crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.

    4. Add the fresh spinach to the skillet with the sausage and sauté for 2-3 minutes until wilted.

    5. Pour the whisked eggs over the sausage and spinach mixture. Stir gently to scramble the eggs, cooking for about 3-4 minutes until fully cooked.

    6. Remove from heat and sprinkle with shredded cheese and salsa before serving.
