Instructions
1.
1. In a large bowl, whisk the eggs with salt and pepper until well combined (2 minutes).

2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil (1 minute).

3. Add the spinach (if using) and sauté for 1-2 minutes until wilted.

4. Pour in the whisked eggs and scramble gently until cooked through (3-4 minutes).

5. In a separate pan, warm the diced grilled chicken over medium heat (3 minutes).

6. Serve the scrambled eggs topped with the warm chicken and salsa.
