Eggs and potatoes

Instructions

  • 1.

    1. Heat olive oil in a non-stick skillet over medium heat (about 2 minutes).

    2. Add diced potatoes and season with salt and pepper. Cook for about 10 minutes, stirring occasionally, until golden and crispy.

  • 3.

    3. While the potatoes are cooking, whisk the eggs in a bowl and season with salt and pepper.

  • 4.

    4. In another skillet, scramble the eggs over medium-low heat until just set (about 3-4 minutes). If using, add spinach to the eggs in the last minute of cooking.

    5. Serve the scrambled eggs alongside the crispy potatoes, drizzling with hot sauce if desired.
