Instructions
1.
1. In a bowl, whisk together the egg whites (or whole eggs and egg whites) until frothy.

2. Add diced tomatoes, cactus, and spinach to the egg mixture. Season with salt and pepper.
3.
3. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.
4.
4. Pour the egg mixture into the skillet, spreading it evenly.
5.
5. Cook for about 3-4 minutes, or until the edges start to set.
6.
6. Carefully fold the omelette in half and cook for another 2-3 minutes until fully cooked through.
7.
7. Serve hot, garnished with additional fresh vegetables if desired.
