Instructions

    In a blender, combine rolled oats, protein powder, mashed banana, almond milk, chia seeds, baking powder, vanilla extract, and salt. Blend until smooth (about 1-2 minutes).

    Let the batter sit for 5 minutes to thicken.

  • 3.

    Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of oil.

  • 4.

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • 5.

    Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

  • 6.

    Serve warm with fresh fruit or a drizzle of maple syrup if desired.
