Instructions

  • 1.

    In a large bowl, combine the Kodiak pancake mix, water (or almond milk), mashed banana, chia seeds, and protein powder (if using). Mix until just combined.

  • 2.

    Fold in the crumbled veggie sausage until evenly distributed.

  • 3.

    Heat a non-stick skillet over medium heat and lightly grease with cooking spray or olive oil.

  • 4.

    Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • 5.

    Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

  • 6.

    Serve warm, topped with additional banana slices and a sprinkle of chia seeds if desired.
