Instructions
1.
In a mixing bowl, combine almond flour, protein powder, baking powder, and salt. Mix well.

In another bowl, whisk together eggs, almond milk, and vanilla extract until smooth.
3.
Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter sit for 5 minutes.
4.
Heat a non-stick skillet over medium heat and lightly grease it with cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
6.
Repeat with the remaining batter, adjusting the heat as necessary.
7.
Serve warm topped with Greek yogurt and fresh blackberries.
