Instructions
1.
In a blender, combine rolled oats, Greek yogurt, eggs, flaxseed meal, baking powder, vanilla extract, cinnamon, and water. Blend until smooth, adding more water if needed to reach a pancake batter consistency (about 1-2 minutes).

Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of oil.

Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
4.
Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
5.
Serve warm, topped with mixed berries, chopped hazelnuts, and a dollop of low-fat Greek yogurt.
