Instructions
1.
In a blender, combine rolled oats, cottage cheese, egg whites, baking powder, and vanilla extract. Blend until smooth (about 1-2 minutes).
2.
Preheat a non-stick skillet over medium heat and lightly grease it with cooking spray.
3.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
4.
Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
5.
Serve warm, topped with melted dark chocolate and fresh strawberries.
