Instructions
1.
In a blender, combine rolled oats, protein powder, mashed banana, almond milk, baking powder, and cinnamon. Blend until smooth (about 1-2 minutes).
2.
Fold in the mixed berries gently to avoid breaking them.
3.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of oil.
4.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
5.
Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
6.
Serve warm with a drizzle of peanut butter and additional fresh berries on top.

1 scoop protein powder (vanilla or unflavored)

1 ripe banana, mashed
4.
1/2 cup unsweetened almond milk (or any milk of choice)

1 teaspoon baking powder
6.
1/2 teaspoon cinnamon

1/2 cup mixed berries (blueberries, raspberries, blackberries, strawberries)
8.
1/2 teaspoon natural peanut butter (optional, for serving)
