Instructions
1.
1. In a bowl, whisk together the eggs, salt, and pepper until well combined (2 minutes).

2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil (1 minute).

3. Add the chopped spinach and halved tomatoes to the skillet, sautéing for about 2-3 minutes until the spinach is wilted.

4. Pour the egg mixture over the vegetables, tilting the pan to spread it evenly (1 minute).

5. Cook for about 3-4 minutes until the edges start to set, then sprinkle the low-fat Monterey Jack cheese on top.

6. Cover the skillet with a lid and cook for another 2-3 minutes until the cheese melts and the eggs are fully cooked.
7.
7. Slide the omelette onto a plate, fold it in half, and serve with fresh strawberries on the side.
