Instructions
1.
In a skillet, cook the diced chicken sausage over medium heat for about 5 minutes until browned.

While the sausage is cooking, whisk the eggs in a bowl and season with salt and pepper.

Add the eggs to the skillet with the sausage and scramble until fully cooked, about 3-4 minutes.

If using, stir in the chopped spinach and cook for an additional minute until wilted.
5.
Warm the corn tortillas in a separate pan or microwave for about 30 seconds.
6.
Assemble the tacos by placing the egg and sausage mixture on each tortilla and drizzling with green sauce.
