This morning I was in a rush to get to work but I still prioritized getting these egg bites (roasted red pepper starbucks) and it made me feel energized and proud that I stayed committed to my breakfast.

Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a mixing bowl, whisk together the eggs and cottage cheese until smooth.

  • 3.

    Stir in the diced roasted red peppers, chopped spinach, and shredded cheese (if using). Season with salt and pepper.

  • 4.

    Grease a muffin tin with cooking spray or olive oil.

  • 5.

    Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  • 6.

    Bake for 20 minutes or until the egg bites are set and lightly golden on top.

  • 7.

    Let them cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.
