Today I tried something different and super savory: Skillet Zucchini and Mushrooms! I paired it with baked seasoned potatoes and scrambled eggs with a sprinkle of cheese for a boost of protein.

Instructions

  • 1.

    Preheat your oven to 400°F (200°C).

  • 2.

    Toss the cubed potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread them on a baking sheet and bake for 20-25 minutes until golden and crispy, flipping halfway through.

  • 3.

    While the potatoes are baking, heat a non-stick skillet over medium heat. Add the diced zucchini and sliced mushrooms. Sauté for about 5-7 minutes until tender. Season with salt, pepper, and fresh herbs.

  • 4.

    In a separate bowl, whisk the eggs and season with salt and pepper. Scramble them in a non-stick pan over medium heat until cooked to your liking. If using cheese, add it just before the eggs are done to melt.

  • 5.

    Serve the sautéed vegetables alongside the baked potatoes and scrambled eggs. Garnish with fresh herbs.
