Instructions

1. In a non-stick skillet, heat a small amount of olive oil or spray with cooking spray over medium heat.

2. Pour in the egg whites and season with salt and pepper. Stir gently with a spatula.

3. Cook for about 3-4 minutes, or until the egg whites are set but still moist.

4. Add the low-fat cheese and stir until melted and evenly distributed.
5.
5. Serve immediately with sliced avocado on the side.
