Instructions
1.
In a large bowl, whisk the eggs until well combined. Season with salt and pepper.

Heat olive oil in a non-stick skillet over medium heat.
3.
Add the diced onion and sauté for about 3-4 minutes until translucent.
4.
Stir in the chopped spinach and cook until wilted, about 2 minutes.
5.
Pour the whisked eggs into the skillet and gently stir with a spatula, cooking until just set, about 3-4 minutes.
6.
Remove from heat and serve immediately.
