Instructions
1.
Preheat your oven to 375°F (190°C).

In a skillet, lightly sauté the diced onion in a small amount of olive oil until translucent (about 3-4 minutes).

Add the chopped spinach and diced tomato to the skillet, cooking until the spinach is wilted (about 2-3 minutes).

In a mixing bowl, whisk together the eggs, low-fat cheese, salt, and pepper.

Stir in the sautéed vegetables and mix well.
6.
Spray a baking dish with cooking spray or lightly grease it with olive oil.
7.
Pour the egg mixture into the prepared baking dish and spread it evenly.
8.
Bake in the preheated oven for 25-30 minutes, or until the quiche is set and lightly golden on top.
9.
Let it cool for a few minutes before slicing and serving with black beans on the side.
