Instructions
1.
1. Heat olive oil in a skillet over medium heat. Add the turkey patties and cook for about 5-7 minutes on each side until fully cooked.

2. In the same skillet, crack the eggs and cook them sunny-side up or to your preference. Season with salt and pepper.

3. While the patties and eggs are cooking, lightly sauté the spinach or mixed greens in the skillet for 1-2 minutes until wilted.

4. Toast the Ezekiel bread slices until golden brown.

5. Assemble the sandwich by placing a turkey patty on each slice of bread, topping it with an egg and sautéed greens.

6. Serve warm, optionally with hot sauce or salsa.

4 turkey patties (lean, preferably homemade or low-fat)

4 large eggs

2 cups fresh spinach or mixed greens
