Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a large bowl, whisk together the eggs, salt, and pepper.

  • 3.

    Stir in the chopped kale, red onion, red bell pepper, and crumbled veggie sausage.

  • 4.

    If using, fold in the cheese until evenly distributed.

  • 5.

    Grease a muffin tin with cooking spray or olive oil.

  • 6.

    Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  • 7.

    Bake for 20 minutes or until the muffins are set and lightly golden on top.

  • 8.

    Let cool for a few minutes before removing from the tin. Serve warm.
