Made the Mediterranean egg white and veggie wrap this morning.

Good breakfast choice Bradley! Youre halfway through your weekly goal of having six protein-rich breakfasts. Youve been consistent with your Mediterranean egg white and veggie wrap and its clearly working for you. Three down three more to go!

Instructions

  • 1.

    1. In a non-stick skillet, spray a little olive oil and heat over medium heat.

  • 2.

    2. Add the egg whites and cook until they start to set, stirring gently.

  • 3.

    3. Once the egg whites are fully cooked, season with salt and pepper.

  • 4.

    4. Lay the whole wheat wrap flat and layer with lettuce, spinach, cherry tomatoes, ham, and feta cheese.

  • 5.

    5. Spoon the cooked egg whites on top of the veggies and cheese.

  • 6.

    6. Roll the wrap tightly, slice in half, and serve warm.

    4 whole wheat wraps

  • 3.

    2 cups fresh spinach (optional for added fiber)

  • 4.

    1 cup cherry tomatoes, halved

  • 5.

    1 cup diced lean ham

  • 6.

    1/2 cup crumbled feta cheese

  • 7.

    2 cups lettuce, chopped

  • 8.

    Salt and pepper to taste

  • 9.

    Olive oil spray (optional)
