Great way to start off tthe day! Rhe boiled eggs and the baked egg McMuffin with tomato provide a good balance of protein and carbohydrates

Instructions

  • 1.

    1. Begin by boiling the eggs. Place them in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 12 minutes, then cool in ice water.

    2. While the eggs are cooking, toast the whole wheat English muffins until golden brown.

  • 3.

    3. Slice the tomato and season with salt and pepper.

  • 4.

    4. Once the eggs are cool, peel and slice them in half. Season with salt and pepper.

    5. Assemble the muffins: place a slice of tomato on each muffin half, add spinach if using, and top with the boiled egg halves.
