Instructions
1.
Heat olive oil in a skillet over medium heat (2 minutes).
2.
Add crumbled tofu veg sausage and cook until browned (5-7 minutes).
3.
Stir in chopped spinach and cook until wilted (2 minutes).
4.
Season with salt and pepper to taste.
5.
Toast the whole grain bread slices.
6.
Assemble the sandwich by placing the tofu mixture between two slices of bread.
7.
Add tomato and avocado slices if desired.
8.
Serve with apple slices on the side.
