Instructions

    1. Heat a non-stick skillet over medium heat and spray with olive oil.

    2. Add spinach to the skillet and sauté for 2-3 minutes until wilted. Season with salt and pepper.

    3. In a separate bowl, crack the eggs and whisk them together. Pour the eggs into the skillet with spinach and cook until scrambled, about 3-4 minutes.
