Instructions
1.
1. Heat a non-stick skillet over medium heat and add sesame oil.

2. Sauté the garlic and onion until fragrant, about 2 minutes.

3. Add the sliced wood ear mushrooms and cook for another 3-4 minutes until tender.

4. Stir in the chopped spinach and cook until wilted, about 2 minutes.
5.
5. Push the vegetables to one side of the skillet and pour in the beaten eggs.
6.
6. Scramble the eggs until fully cooked, then mix everything together.
7.
7. Add soy sauce, salt, and pepper to taste, and cook for an additional minute.
8.
8. Serve hot, garnished with chopped green onions.

1 tablespoon low-sodium soy sauce

1 teaspoon sesame oil

2 cloves garlic, minced

1 small onion, sliced

Salt and pepper to taste
9.
Chopped green onions for garnish
