Recipe is below should you have any thoughts. Great for freezing ahead. I added 15g flaxseed. Of course tea and water this morning too

Instructions

  • 1.

    In a large bowl, mix the whole wheat flour, baking powder, flaxseed, and salt.

  • 2.

    In another bowl, whisk together the Greek yogurt, eggs, milk, and honey (if using) until smooth.

  • 3.

    Combine the wet and dry ingredients, stirring until just mixed. Do not overmix.

  • 4.

    Heat a non-stick skillet over medium heat and lightly grease it with cooking spray.

  • 5.

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

  • 6.

    Flip the pancakes and cook for another 2-3 minutes until golden brown.

  • 7.

    Serve warm, topped with sliced strawberries and a dollop of yogurt.
