Instructions

1. Toast the honey wheat bread slices until golden brown (about 3-4 minutes).

2. In a non-stick skillet, sauté the spinach over medium heat until wilted (about 2-3 minutes).

3. In a separate bowl, whisk the egg whites and whole eggs together, then pour into the skillet with the spinach. Cook until set, about 5-7 minutes.

4. In serving bowls, layer the Greek yogurt and top with pomegranate seeds.

5. Serve the egg and spinach mixture over the toasted bread alongside the yogurt parfait.
