Instructions

    1. Begin by cooking the turkey bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and set aside.

    2. In the same skillet, spray with cooking spray or add a small amount of olive oil. Crack the eggs into the skillet, season with salt and pepper, and cook until the whites are set, about 3-4 minutes. For a folded effect, you can scramble them gently.

    4. Assemble the sandwiches by placing a slice of turkey bacon on the bottom half of each muffin, followed by the cooked egg and a handful of fresh spinach if using.
